Usually, at the New Year's table, in addition to the main course and appetizers, there are at least 1-2 salads. The new year 2020 is the year of the rat, and rodents are unpretentious in eating. Therefore, you can especially not bother about the ingredients. It remains only to decide which option you need: simple, dietary or extravagant for gourmets? The following recipes will help with the selection.

Simple recipes

What housewives usually need is for the dish to be tasty, food products to be affordable, and cooking does not take much time. The rest is a matter of taste. Some people like chicken and pineapple, others like fish and seafood.

Chicken and Pineapple Salad


  • chicken fillet - 300 g;
  • oranges - 2 pcs.;
  • avocado - 1 pc.;
  • garlic - 1 clove;
  • lemon juice - 2 tbsp. l .;
  • orange juice - 1 tbsp. l .;
  • honey - 1 tsp;
  • olive oil - 1 tbsp. l .;
  • parsley is a small bunch.

Chicken fillet cut into medium pieces so that it can be conveniently pricked on a fork. Heat the pan well and fry the pieces until golden brown. At the end, add salt and finely chopped garlic. Allow to cool.

Peel the orange from the peel, seeds and films. Cut into medium slices (about the same size as chicken). Avocados also peel and bone. Cut into slices.

Combine meat, oranges and avocados. Pour dressing: lemon and orange juice, honey, olive oil. Sprinkle with finely chopped parsley.

Bacon and Cherry Tomato Salad


  • bacon - 5 slices;
  • Romaine lettuce - medium bunch;
  • cherry tomatoes - 100 g;
  • canned corn - 100 g;
  • feta cheese - 100 g;
  • olive oil - 1 tbsp. l .;
  • apple cider vinegar - 1 tbsp. l .;
  • lemon juice - 1 tsp;
  • sugar - 2 tsp.

Dice the bacon and fry in a pan. Allow to cool on a paper towel. Rinse the salad well, dry and tear into medium sized pieces. Tomatoes cut in half. Cut feta cheese into small cubes. Mix everything, add corn and pour dressing: oil, vinegar, lemon juice and sugar.

Grape and Arugula Salad


  • a large bunch of arugula;
  • grapes - 200 g;
  • avocado - 1 pc.;
  • fried walnuts - 50 g;
  • 1 small red onion;
  • olive oil - 2 tbsp. l .;
  • balsamic vinegar - 1 tbsp. l .;
  • honey - 1 tbsp. l .;
  • salt and pepper to taste.
  • pomegranate seeds for decor

Rinse well, break into large pieces. Each grape berry is cut in half. Peel and chop avocados. Coarsely chop the nuts. Cut the onion into thin rings. Marinate them in balsamic vinegar for 10 minutes. Mix all the ingredients. Decorate with pomegranate seeds.



  • 2 chicken breasts or fillets;
  • 400 g pickled champignons;
  • 1 large onion;
  • 0.5 cup chopped walnuts;
  • 100 g of hard cheese;
  • 2 eggs;
  • green onions, parsley;
  • mayonnaise sauce.


  1. Boil the chicken in salted water, and after it cools, finely chop.
  2. Hard-boiled eggs, cool in cold water. Peel and grate the shell.
  3. Grind cheese on a coarse grater.
  4. Chop onion and mushrooms and fry until golden brown, salt.
  5. Chop greens.
  6. Stir all products and season with mayonnaise.

For beauty, you can lay out the mixture in the form of a wreath. To do this, place a glass on the center of the plate and carefully form a circle of lettuce around it. Remove the glass and decorate the dish with sprigs of dill, parsley, olives, or pomegranate seeds.

"White fur coat" made of tuna

This option is also called Mimosa with Tuna. To prepare it you will need:

  • 1 can of canned tuna in its own juice;
  • 4 boiled eggs;
  • 100 g of hard cheese;
  • 1 onion;
  • 1 carrot;
  • mayonnaise or yogurt;
  • greenery.

Tip: To make the dish more nutritious and increase its volume, you can add potatoes. The non-potato option is more dietetic.

Preparation of ingredients:

  1. Eggs and carrots need to be boiled. Separate the yolks from the proteins and grate separately on a fine grater.
  2. Cheese should also be grated.
  3. Open the canned food and mash the fish with a fork.
  4. Finely chop the onion. If you want to remove its bitterness, then pour over the vegetable with boiling water.

The salad is laid out in layers. Each layer is smeared with mayonnaise.

  1. First, spread the mashed tuna.
  2. On top of the tuna is a grated protein. Do not forget to add and lubricate.
  3. Next - chopped onions.
  4. The third layer is grated cheese, and the fourth is yolks. The process can be repeated 1-2 times. Top with mayonnaise sauce and garnish with herbs. If you have a fresh cucumber on hand, then you can decorate the top with cucumber circles.

Before serving, it is advisable to refrigerate the dish in the refrigerator.

Crab stick salad with crackers

This is a very simple dish, as its components do not need to be cooked, fried, etc. Just bought, cut, and you're done! In this case, it turns out very satisfying and appetizing.


  • a can of corn;
  • a small package of crackers with a neutral taste, for example, with sour cream, or homemade crackers;
  • packaging of crab sticks (250 g);
  • a piece of parmesan (200-300 g);
  • Beijing cabbage - 0.5 heads;
  • green onions and dill;
  • 2 cloves of garlic.

Step 1: Dice the cheese and crab sticks.

Step 2: chop the cabbage, chop the herbs, pass the garlic through a press.

Step 3: mix, salt and add mayonnaise.

Useful: instead of crab sticks, ham can be thrown into this salad. It goes well with the rest of the ingredients.

Recipe "Mouse" with squid and cream cheese

This is an unusual salad, both on the side of the composition and in the design, but at the same time it is very simple to cook. The main ingredient is squid meat. You can buy frozen carcass, or smoked squid. Depending on this, you get a different taste.


  • squid - about 300-400 g;
  • eggs - 2-3 pcs. (hard-boiled);
  • processed cheese - 2 pcs.;
  • 1 onion;
  • mayonnaise;
  • olives and carrots - for decoration.

Tip: To add freshness to the salad, you can add 1 cucumber or apple.


  1. Smoked meat is ready to eat, but ice cream will have to be thawed and cooked. Squid is not cooked for long - only 2 minutes. Meat should already be dipped in boiling water!
  2. Combine boiled and diced squid with onions, grated eggs and cheese.
  3. Salt, pour sauce and mix.
  4. Next, you need to form New Year's from a regular salad, forming a mouse out of it (well, or a rat - a symbol of 2020). From above it can again be greased with a thin layer of mayonnaise, or sprinkled with grated protein.
  5. We make eyes and a nose from olives, and ears from a slice of carrot. As a tail, a piece of squid is suitable, and the antennae can be made from twigs of greenery.

Useful holiday recipes

For those who are passionate about proper nutrition and worried about their figure, the recipes from this section are best suited. They are low-calorie, healthy, but at the same time tasty.

Cheese basket

You will need:

  • celery - 3 stalks;
  • lettuce;
  • 50 g of nuts;
  • 1 green apple
  • turkey breast - 150 g;
  • cheese - 200 g;
  • grapes - 50 g;
  • lemon juice - 1 tsp;
  • garlic - to taste;
  • sour cream - 2-3 tbsp. l

It is immediately necessary to prepare baskets in which we will spread our food.

  • 200 g of cheese is enough for about 2 baskets. Rub it on a coarse grater and divide into 2 parts. At this stage, you can add garlic, then the basket will be fragrant.

  • We cover the baking sheet with parchment paper and spread a circle of cheese with a not very thick layer.

  • We send the baking sheet to the preheated oven for several minutes so that the cheese melts, but does not burn. Until the cheese mass has frozen, you need to make a basket out of it. To do this, you need a bank. We lift the parchment and put it on top of the jar, creating the necessary shape, as shown in the photo.

We put the basket to cool in a cool place, for example, on the balcony. And while it cools, we make the salad directly:

  • Boil the breast and cut into cubes.

  • Chop apples.

  • Crush the nuts with a knife.

  • Grind celery.

  • Cut the grapes in half, and remove the seeds.

  • Chop lettuce.

  • Prepare dressing: mix sour cream with lemon juice, salt and pepper.

Mix the components of the salad and put it in a basket. You can sprinkle this beauty with sesame seeds on top.


And this is a simpler and easier recipe - it contains only plant components, but nevertheless it is able to surprise and delight the eye with its unusual appearance. So you will need:

  • Beijing and red cabbage - 0.5 head each;
  • a little dill;
  • small pomegranate;
  • olive oil;
  • garlic - 1 clove;
  • wine or apple vinegar - 1 tbsp. l

Cooking method:

  1. Chop red cabbage on a shredder or knife. Salt it and shake it with your hands to make it softer. Beijing is not necessary to mash.
  2. Grind dill (this is convenient to do with scissors).
  3. Extract grain from pomegranate. To do this, you need to cut the peel crosswise and break the fruit into several parts. Be sure to remove the white film.
  4. We connect the components, add a little, add vinegar and oil, and mix thoroughly. Done!

Salad with Strawberries and Fried Chicken


  • chicken breast - 1-2 pcs., depending on size;
  • a handful of baby spinach;
  • red onion - half;
  • strawberries - 5-7 pcs.;
  • half an avocado;
  • almond petals - 1 tbsp. l without a hill;
  • Feta - 80-100 g.

For marinade:

  • 3 tbsp. l olive oil;
  • 2 tbsp. l balsamic vinegar;
  • dried Italian herbs, salt, pepper - to taste.

  1. First you need to marinate the meat. We prepare the marinade from the listed products and dip the whole breast into it. Leave for at least 15 minutes in the refrigerator.
  2. We fry meat (it is possible whole) in olive oil until fully cooked. Due to vinegar, the meat will have a beautiful brown crust.
  3. Spread the well-washed spinach leaves in a bowl. Add the onion cut in half rings.
  4. Cut the flesh from the avocado. To do this, it is convenient to first make transverse incisions, and then remove the pulp with a spoon.
  5. We divide the strawberries into 2 parts and combine the prepared products, except meat. We season them with the same marinade.
  6. Sprinkle the salad with almond petals / sesame seeds and crumble a small amount of feta cheese.
  7. At the end we spread the chopped chicken.

Fancy Salads

If you have already tried all kinds of dishes and want to discover something new, to surprise your taste buds, then you should pay attention to the following recipes. Some components of these salads will have to be searched, but they are definitely on sale, and you don’t have to fly for them to Italy. But the guests will be definitely surprised.

Shrimp Salad in Pineapple Halves


  • 1 large pineapple;
  • frozen shrimp - 500 g;
  • champignons - 100 g;
  • Kiwi - 2-3 pcs.;
  • tangerines - 3 pcs.;
  • apple - 1 pc.;
  • a sprig of parsley and dill;
  • cognac - 20 ml .;
  • Amaretto liquor - 2 tbsp. l .;
  • wine vinegar - 1 tbsp. l (can be replaced with lemon juice);
  • olive oil - for refueling.

Tip: mushrooms can optionally be replaced with avocados or nuts.


  1. Washed pineapples cut in half together with the top. Cut the core and cut it into cubes.
  2. Shrimp dip for 2 minutes in boiling water. Then remove, dry, clean.
  3. Leave some of the greenery for decoration, and chop the rest finely.
  4. Whole shrimps in a bowl, sprinkle with herbs and pour cognac. Allow to soak for 10 minutes.
  5. Cut the mushrooms into plates, boil for 7 minutes. Pour into a colander to water glass.
  6. Now we take up the fruit. The apple needs to be finely chopped, tangerines sorted into slices, and the kiwi peeled and cut into half rings.
  7. Combine all products, season with wine vinegar and olive oil. Pour the mixture into the pineapple half.
  8. Sprinkle with liquor and decorate with greens.

"Exotic" with grapes and prunes

List of required products:

  • 600 g of chicken (best - breast);
  • 150 g of green grape raisins, nuts and prunes;
  • corn in a jar;
  • cheddar - up to 200 g;
  • mayonnaise.


  1. Boil the chicken and cut into cubes.
  2. Soak the prunes in hot water, dry and chop finely. Cut a few pieces in half for decoration.
  3. Chop the nuts, cut the grapes into 2 parts.
  4. Grate the cheese and combine it with chicken, prunes, nuts, corn and season with sauce.
  5. Garnish with grapes.

"Spicy" with grilled chicken and avocado

The main ingredient in this unusual, gourmet dish is grilled chicken. You can buy ready-made meat, or cook it yourself. The main thing is to pre-marinate the meat in spices.

For a serving you will need:

  • 300 g of chicken;
  • curd cheese (Feta, Philadelphia or others) - 150 g;
  • cherry tomatoes - 4 pcs.;
  • avocado - 1 pc.;
  • Red onion;
  • spinach - 100 g;
  • walnuts to taste.

For refueling, use a mixture of olive oil with balsamic vinegar in a 2: 1 ratio. You can also add a pinch of sugar.

Cooking the salad itself is very simple:

  1. First, you need to chop the products: avocado - cut into slices, onion and meat - into strips, tomatoes - cut into 4 parts, nuts - chop into small pieces, and spinach can simply be torn.
  2. Mix everything with a dressing of butter, sugar and vinegar.
  3. Spread crumbled cheese on top and sprinkle this beauty with nuts.

Any ordinary salad can be turned into an interesting and festive one, so that it fits the New Year's table:
